INGREDIENTS
-1 bunch of carrots (orange or purple) cut in half lengthways
-1 orange, juiced
-1 lemon, juiced
-3 crushed garlic cloves
-1 handful of sage leaves, chopped
-150g salted butter, cubed
-olive oil
-salt and pepper
METHOD
Slice all the carrots lengthways leaving a little of the tops attached if you fancy. Place
them in a bowl and add the lemon juice, orange juice, crushed garlic, chopped sage
leaves, salt and pepper and generous drizzle of olive oil to coat and bring it all together. Toss until well seasoned and placed in a large baking dish that has a lip on it to hold the juices, and enough space for the carrot to be spread out single file. Dot the cubes of butter over the carrots and roast at 190C for about 30mins. You want the carrots to slightly crisp around the edges for maximum yum. Enjoy!
